One Pot Gnocchi Chicken Pot Pie


Chicken Pot Pie filling meats Chicken & Dumplings in One Pot Gnocchi Chicken Pot Pie! This ultra comforting recipe cooks in one pot in under 30 minutes.


PREP TIME: 5 minutes

COOK TIME: 25 minutes

TOTAL TIME: 30 minutes

SERVES: 4 servings


INGREDIENTS:

4 tablespoons Butter

1 cup sliced Carrots

4 ounces Fresh Mushrooms, sliced

1 large or 2 small stalks Celery, thinly sliced

1 large Shallot or small Onion, diced

Seasoned Salt, to taste

Black Pepper. to taste

2 cloves Garlic, pressed and minced

1 teaspoon Poultry Seasoning

1 pinch Dried Thyme

3 tablespoons All-Purpose Flour

2 cups Chicken Stock or Broth

1 cup Milk (any kind, even unsweetened Almond Milk)

1 (12 ounce) package Gnocchi

1 1/2 cups shredded Chicken Breast (1/2 pound pre-cooked)

1/2 cup Frozen Peas



INSTRUCTIONS:

1. Heat a Dutch Oven over medium-high heat. Once hot, melt Butter in the pan then add Carrots, Mushrooms, Celery, and Shallots (or Onions). Stir to coat the vegetables in Butter then sauté until the mushrooms release their liquid and it has evaporated, 3-4 minutes. Season with the Seasoned Salt and Pepper the continue to sauté, turning the heat down slightly if necessary, until vegetables are tender, another 6-7 minutes.


2. Add the Garlic, Poultry Seasoning, and Dried Thyme the sauté until the garlic is very fragrant, 1-2 minutes.


3. Sprinkle the Flour over the vegetables then stir to combine and cook for 1 minute. Slowly pour in the Chicken Broth while stirring to avoid lumps, then add the Milk and turn the heat up to medium-high. Bring mixture to a bubble, stirring occasionally, then add the Gnocchi and stir to combine. Turn the heat down to medium then simmer, stirring frequently, until the Gnocchi are tender, 5-6 minutes. Stir in the Chicken and Peas, then taste and add more Seasoned Salt and/or Pepper if necessary. Ladle into bowls, then serve!


**NOTE**

Some brands of Gnocchi are sold in 16 ounce package, versus the 12 ounces called for in this recipe. Increase the amount of Broth and Milk slightly if using a 16 ounce box of Gnocchi.
