Foil Packet Grilled Italian Roasted Potatoes


A quick and easy side dish to throw together in a foil packet and toss on the grill with your favorite meat. It comes out tender and delicious every time. Yum!


PREP TIME: 10 minutes

COOK TIME: 40 minutes

TOTAL TIME: 50 minutes

YIELD: 4 servings


INGREDIENTS:

6 medium Yukon Gold Potatoes

1 stick Unsalted Butter (1/2 cup)

2 tablespoons Olive Oil

1 packet Italian Dressing Seasoning

1/2 teaspoon Black Pepper


INSTRUCTIONS:

1. Preheat a grill to 350° Fahrenheit. Thoroughly wash the potatoes. Cut into about 1 inch bite sized pieces. Place in a medium size bowl.

2. Drizzle with the 2 tablespoon of olive oil. Toss to coat thoroughly.

3. Sprinkle the potatoes with the packet of Italian Dressing Seasoning and the black pepper.

4. Cut two equal sized pieces of aluminum foil, approximately 12x12inches each. layer the foil pieces. Dump the potatoes into the center and bunch together. Cut the butter into pats and place ofer the top of the potatoes in a single layer.

5. Seal the first sheet of foil into a packet. Place the packet seal side down on the second sheet of foil. Seal the second piece of foil into a pacet around the first packet.

6. Place the packet on the grill and close the lid. Allow to cook at 350° Fahrenheit for 20 minutes. Carefully flip the the packet. Reclose the lid and continue to cook for another 20 minutes. Remove from the heat and very carefully open the foil packets. Be cautious as a lot of steam will be released and it could burn you. Serve hot with your favorite protein and vegetable and enjoy!
