Colorful Easter Poke Cake


Easter Poke Cake is a fun, flavorful, and easy to make Easter dessert recipe.


PREP TIME: 20 minutes

COOK TIME: 30 minutes

REST TIME: 1 hour

TOTAL TIME: 1 hour 50 minutes

YIELD: 12 servings


INGREDIENTS:

1 box Betty Crock French Vanilla Cake Mix

3 Eggs

1/2 cup Vegetable Oil

1 cup Water

2 (2.3 ounce) boxes Instant French Vanilla Pudding

3 cups Milk

1 bowl Cool Whip

1 box McCormick Neon Colors Food Coloring


INSTRUCTIONS:

1. In a large bowl combine Cake Mix, Eggs, Water and Vegetable Oil.

2. Divide the batter into 3 bowls.

3. Color each bowl with Food Coloring (Pink, Purple and Green).

4. Place each color of patter into a Ziploc Bag and cut the tip of one corner off.

5. Squeeze the batter into a Greased 9x13 inch baking pan, rotating colors as you move around the pan to create a marbleized look.

6. Bake at 350° Fahrenheit for about 30 minutes, or until the center comes out clean with a toothpick.

7. Poke holes with the back of a wooden spoon about every 1 1/2" across the entire cake.

8. In a separate bowl beat the Milk and Instant Pudding together for about 5 minutes until the pudding starts to set and get thick.

9. Pour the pudding mixture over the cake and allow it to soak into the holes. You can use a rubber spatula to spread the mixture evenly across the entire top.

10. Cover evenly with Cool Whip and Top with your favorite colorful sprikles, if desired.
